Oryzae Sour

TUMUGI 45ml
Aquafaba (bean water) 20ml
Cucumber Juice 20ml
Lime Juice 10ml
Grapefruit Juice 10ml
Almond Syrup 20ml
Shiso (Perilla) Bitters as neede

1) Put all ingredients in a shaker then dry shake to mousse.
2) Add ice in a shaker and pour in a cocktail glass.
3) Decorate sliced cucumber and Shiso bitters.
